Leftover Turkey Stew with veggies, a hearty and comforting dish to warm one's soul. Transform the leftover turkey into a delicious meal that the whole family can enjoy. It's quick, and easy to make, and on the table in under 30 minutes.

Ingredients
- 1 ½ cup leftover turkey, cubed
- 1 onion
- 1 clove of garlic
- 2 celery sticks
- 1 carrot
- 3 potatoes
- 2 tablespoon vegetable oil
- 2 cups chicken stock / broth
- 1 tablespoon tomato puree
- ½ teaspoon salt
- ⅛ teaspoon salt
- 1 tablespoon chopped dill ( or parsley)
Instructions
- In a large pot, heat up the oil on a medium heat, add the peeled and chopped onion, and fry until golden.
- Add the peeled and chopped garlic, carrot, potatoes, and celery stalks, and give it a good stir.
- Throw in the cubed turkey and stock, place a lid on, and leave it to cook until the veggies are tender.
- Add the tomato puree, season well with salt and pepper, and add the freshly-chopped dill.
- Serve hot.
Notes
- You can add any other veggies you have around: peppers, broccoli, spinach, sweet potatoes, etc. Beans can also make a great addition to this stew.
- Any leftover stew can be stored into an air-tight container and refrigerated for up to 3-4 days without any problem.
