Lemon Bars

Bright, tangy lemon bars recipe with a shortbread crust and lemon custard filling. A simple powdered sugar dusting makes these fruit bars a classic!

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter cold

For the Lemon Filling:

  • 2 large egg
  • 1 cup granulated sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon lemon zest
  • 3 tablespoons powdered sugar sifted, for the topping

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Grease a 9x9 baking pan on the bottom and the sides.
  2. Combine the flour and sugar in a small bowl. Using a pastry blender, cut in the butter until you have coarse crumbs.
  3. Pat the shortbread mixture into the bottom of the prepared pan.
  4. Bake for 15-18 minutes.
  5. While the crust is baking, combine the egg, sugar, juice, flour, baking powder and lemon zest in a bowl. Beat until smooth.
  6. Pour the mixture over the warm crust.
  7. Bake for 25 minutes.
  8. Cool the bars and then sprinkle them with sifted powdered sugar.
  9. Cut into 12 squares and store the bars in an airtight container.
