Lemon Bars with Cake Mix Recipe

This Lemon Bars with Cake Mix recipe features a buttery cake mix crust topped with a creamy lemon cream cheese filling. The crust is pressed into a pan and baked until golden brown, then covered with a smooth, tangy layer combining cream cheese, eggs, powdered sugar, and lemon zest. The bars offer a balance of sweet and citrus flavors with a tender texture, finished with a sprinkle of powdered sugar for extra sweetness and presentation.

Description

The recipe begins by mixing lemon cake mix with an egg and melted butter to form a smooth batter that is pressed evenly into a greased 9x13 pan. This base bakes at 350 degrees Fahrenheit until it sets and edges turn golden, forming a sturdy yet tender crust for the filling.

The filling combines cream cheese blended with additional eggs, vanilla extract, powdered sugar, and lemon zest. This mixture is spread atop the baked crust, adding a creamy and zesty dimension to the dessert. Baking the filled pan again allows the filling to set firmly while maintaining softness.

The finished lemon bars are dusted with powdered sugar before serving, which complements the tartness and adds a nice visual touch. This dessert is suited for gatherings or anytime a citrus-flavored sweet treat is desired, offering a rich yet fresh lemon flavor with a soft, creamy texture contrasting the firm crust.
