Lemon Brownies
Description
Lemon Brownies feature a rich, buttery batter enhanced by fresh lemon zest and juice, providing a pronounced citrus note throughout. The recipe calls for beating butter and sugar until fluffy before incorporating eggs and lemon elements, then folding in flour and baking powder. Baking in an 8x13 inch pan at 350°F, the edges brown while the center sets, with baking time adjusted according to whether a fudgy or spongier texture is desired. Once cooled, a lemon glaze is spread over the brownies, contributing additional tartness and sweetness.
The blend of tangy lemon with the traditional brownie base creates a balanced flavor profile that refreshes the usual chocolate treat. The soft crumb and moist texture make these suitable for slicing and serving at gatherings or casual occasions where a citrus twist is appreciated.
These brownies can be stored in an airtight container in the refrigerator for up to five days, retaining their moistness and flavor. Adjusting the baking time allows customization of texture, catering to personal preference for either fudgy or more cake-like brownies.
Ingredients
For the Brownies:
- 1 ½ cup all-purpose flour spoon and level
- 1 cup butter 8oz, at room temperature
- 1 ½ cup granulated sugar
- 3 tbsp lemon juice about 1 lemon
- 2 tsp lemon zest of one lemon, zest
- ½ tsp baking powder
- 2 egg at room temperature
For the Lemon Glaze:
- ¾ cup powdered sugar
- 1 ½ tbsp lemon juice
- lemon zest of ½
Instructions
- Preheat the oven to 350F. Prepare an 8’’x 13’’ baking tray with parchment paper. Set it aside.
- Place butter in a medium-sized bowl.
- Beat it until creamy.
- Then add sugar and beat for a couple of minutes.
- Keep beating until soft and fluffy
- Next, add one egg at a time, beating each egg until well combined.
- Add lemon zest and lemon juice, and stir to combine.
- In a different bowl, mix flour with baking powder. Then, incorporate it into the brownies batter.
- Mix with a silicone spatula to combine.
- Pour your brownie batter into the prepared baking tray, and use the back of the spatula to extend it evenly.
- Bake for 22-25 minutes, or until the edges are brownish and the center is set. For fudgy brownies, your baking time will be closer to 22 minutes. For spongy brownies, 25 to 28 minutes will be ideal.
- Once out of the oven, let it cool to room temperature before unmolding and slicing.
- Before serving, mix all the ingredients for the lemon glaze in a small bowl.
- When brownies are cool, coat your brownies with the glaze and let it stand for a few minutes until the glaze harden.
- Slice and enjoy!
Notes
- Store leftovers in an airtight container in the refrigerator for up to five days to maintain freshness.
- Adjust the baking time between 22 and 28 minutes depending on your preferred brownie texture: shorter for fudgy, longer for spongier.
- The lemon glaze adds extra tartness; apply it only after the brownies have cooled to room temperature.
