Description

Lemon Butter Chicken begins by seasoning and flouring bite-sized chicken chunks. These cook in melted butter until golden and cooked through, then are set aside. The assembly involves serving the chicken atop egg noodles, spooning the lemon butter sauce over, and reserving extra sauce for additional servings.   • 1 pound chicken breast boneless skinless
  • 1/4 cup all-purpose flour
  • 4 tablespoons butter divided
  • 1/2 small onion diced finely
  • 1 cup chicken stock
  • 3 tablespoons lemon juice fresh
  • 8 ounces egg noodles dry

Instructions

Get prepped

  1. Slice chicken into bite sized pieces, season with salt and pepper and toss with flour.

Cook the chicken

  1. Heat a large skillet over medium-high heat and melt 2 tablespoons butter.
  2. Add the chicken to the skillet and cook (depending on the size of your chicken chunks) a few minutes per side until chicken is cooked, and golden brown.
  3. Remove and keep warm.

Cook the pasta

  1. Meanwhile, cook egg noodles according to package directions, drain and lightly butter.

Make the sauce

  1. Add onion to the pan and cook until soft, about 1 to 2 minutes.
  2. Add chicken broth to pan and bring to a boil, scraping up the browned bits from the pan.
  3. Add lemon juice and boil until mixture is reduced to about 1/3 cup.
  4. Remove from heat and add remaining 2 tablespoons butter.
  5. Return chicken to pan and heat through.

Serve

  1. Serve over egg noodles, and spoon the lemon butter sauce over the top.
  2. Save the extra sauce, and serve at the table for anyone who needs a little more.
  3. Devour.

  • Serve with fresh steamed green beans or frozen vegetables for a balanced plate.
  • You may substitute chicken thighs for breast if preferred.
