Lemon Butter Garlic Shrimp Scampi
Description
This recipe involves cooking shrimp in butter until pink and just firm, then finishing them in a lemony garlic butter sauce that is gently reduced with white wine. Crushed garlic is cooked briefly in melted butter along with wine to infuse the sauce, which is then thickened with additional butter whisked in. Lemon juice and freshly grated zest give the sauce a bright acidity that balances the richness of the butter and shrimp.
The shrimp are cooked separately in butter, then combined with the sauce allowing the flavors to meld gently. The final touch of chopped fresh chives adds a mild herbal note. This preparation allows the shrimp to remain tender and coated in a glossy, fragrant sauce.
Serving suggestions include placing the shrimp and sauce over cooked pasta, or for low-carb alternatives, zucchini noodles or spaghetti squash. The dish is straightforward but showcases balanced ingredients to complement the natural sweetness of shrimp.
Notes also suggest substituting white wine with white grape juice or chicken broth if needed. If serving with pasta, boil the water before starting the scampi to streamline preparation.
Ingredients
- 8 tablespoons butter divided
- 5 garlic crushed, cloves
- ¼ cup white wine
- 20 Shrimp peeled and deveined, medium
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- 1 teaspoon chive chopped, fresh
Instructions
- Add 2 tablespoons butter to a small saucepan on the stove over medium heat.
- Once melted, add the crushed garlic cloves. Cook for 1-2 minutes, then add the white wine.
- Reduce for 5-6 minutes, then add 4 tablespoons butter, whisking all of the ingredients together.
- Cook for 2-3 minutes, then turn the heat off, cover the saucepan and set it aside.
- Add the remaining 2 tablespoons butter to a large skillet. Once the butter is melted, add the shrimp. Sprinkle with the salt and pepper.
- Cook 3-4 minutes, flipping the shrimp half way through.
- Add the lemon juice, then add the garlic butter sauce.
- Cook for 1-2 minutes, remove from the heat and top with the lemon zest and chives.
- Serve over cooked pasta or with your choice of side.
Notes
- Prepare pasta water in advance by bringing to a boil before starting the shrimp to serve immediately.
- For low-carb options, serve shrimp scampi over zucchini noodles or spaghetti squash instead of pasta.
- White grape juice can replace white wine in the sauce for a non-alcoholic alternative.
- Chicken broth is a suitable substitute for white wine if unavailable.
