Ingredients

Servings
  • 4 chicken breasts boneless skinless
  • ½ tsp sea salt
  • ½ tsp pepper
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup chicken broth low sodium
  • ¼ cup fresh lemon juice about 2 lemons
  • 1 tsp lemon zest
  • 2 tbsp unsalted butter
  • 1 tsp dried oregano or fresh if available
  • 1 tbsp fresh parsley chopped (optional, for garnish)
  • 1 bag Trader Joe’s Cauliflower Gnocchi
  • 1 tbsp olive oil

Instructions

  1. First, prepare the chicken: Season both sides of the chicken breasts with salt and pepper.
  2. Sear the chicken: Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes per side, or until they’re golden brown and cooked through (internal temperature of 165°F). Remove the chicken from the skillet and set it aside on a plate.
  3. Make the lemon sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chicken broth, lemon juice, and lemon zest. Stir well, scraping up any browned bits from the bottom of the pan.
  4. Simmer and thicken: Let the sauce simmer for 3-4 minutes to reduce slightly. Stir in the butter and dried oregano until the butter melts and the sauce becomes silky. Return the chicken to the pan, spooning the lemon sauce over the top. Simmer for another 2 minutes to let the flavors meld.
  5. Cook the cauliflower gnocchi: While the chicken simmers, heat 1 tbsp of olive oil in a separate skillet over medium-high heat. Add the Trader Joe’s cauliflower gnocchi directly from the freezer and sauté for 8-10 minutes, flipping occasionally, until the gnocchi is golden and crisp on the outside and tender on the inside.
  6. Serve: Finally, plate the cauliflower gnocchi and top with the lemon chicken. Spoon extra lemon sauce over the chicken and gnocchi. Garnish with fresh parsley if desired.

Notes

  • Use fresh lemon juice and zest for the best flavor. Avoid bottled lemon juice, as it can taste less vibrant.
  • Make sure the chicken reaches an internal temperature of 165°F for safe consumption while keeping it juicy.
  • Cook the gnocchi straight from the freezer for a crisp texture. Avoid thawing it, which can make the gnocchi mushy.
  • Sauté garlic just until fragrant, about 30 seconds, to avoid burning and bitterness in the sauce.
  • Store in the fridge for up to 4 days.
