Lemon Chicken

These tender and juicy Lemon Chicken Thighs are so easy to make and are packed with incredible lemony garlic flavor!

Ingredients

Servings
  • 1 ½ - 2 pounds chicken thighs boneless and skinless
  • Zest and juice of 2 lemons
  • ½ cup chicken stock
  • ¼ cup butter divided
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 2 teaspoons fresh parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. Add the dried basil, smoked paprika, dried parsley, salt and pepper to a small bowl and whisk together.
  2. Sprinkle the mixture over both sides of the chicken.
  3. Heat a large skillet to medium and add in the olive oil, half the butter and the chicken.
  4. Sauté for several minutes on both sides, then remove and set aside.
  5. Add in the garlic and sauté for about 20 seconds, careful not to brown it.
  6. Pour in the chicken stock and remaining butter, then simmer for a few minutes or until reduced by about half.
  7. Stir in the lemon juice and zest, then add the chicken back in and cover. Continue cooking until the chicken is cooked through or reaches an internal temperature of at least 165°F when checked with a meat thermometer.
  8. Serve with the lemon sauce poured over the top and garnish with the fresh parsley. Store leftovers in an airtight container for up to 3 days or freeze.

Notes

  • If you don't have chicken thighs, you can use chicken breast instead.
