Lemon chicken piccata meatballs

Lemon chicken piccata meatballs bring together ground chicken mixed with herbs, Parmesan, and lemon zest for tender bites cooked until golden. They are simmered in a lemony sauce enriched with butter, garlic, capers, and fresh parsley that adds tang and depth. This dish features a balance of bright citrus flavors with savory, aromatic herbs and a rich sauce coating the meatballs perfectly. It works well as a main course served over pasta or alongside vegetables.

Description

Lemon chicken piccata meatballs use ground chicken combined with breadcrumbs, Parmesan, parsley, oregano, thyme, lemon zest, garlic powder, salt, and pepper. Formed into golf ball-sized portions, they are first pan-fried until golden brown on all sides, developing a flavorful crust.

After browning, the meatballs finish cooking in a butter-based piccata sauce made by sautéing garlic, then simmering chicken stock, capers, parsley, and lemon juice. The sauce is tangy and buttery with salty capers and fresh herbs, which infuse the meatballs as they cook. This method keeps the meatballs moist while imparting piccata’s characteristic bright and savory flavors.

The resulting dish pairs nicely with pasta, rice, or a fresh salad, making a satisfying meal that balances protein, acidity, and herbs. Adjust seasoning at the end to taste before serving.
