Lemon Cobbler

Lemon Cobbler features a tender batter baked over melted butter, topped with sweet lemon pie filling. The dessert combines a soft cakey base with the bright, tangy flavor of lemon, creating a comforting, fruity cobbler with golden edges and a luscious texture.

Description

This lemon cobbler begins by melting butter in a baking dish, forming a rich base. A batter of flour, sugar, baking powder, salt, buttermilk, vanilla, and lemon extract is poured over the melted butter without stirring, allowing the batters to separate slightly during baking for a layered texture. The lemon pie filling is spooned on top, providing a sweet and tart contrast.

Baked at 350 degrees F, the cobbler develops golden brown edges with a soft center. The lemon filling enhances the cake-like base with its bright, citrus flavor. This balance between buttery cake and lemony topping creates a refreshing yet indulgent dessert.

The cobbler is delicious served warm, optionally topped with vanilla ice cream or whipped cream to complement the lemon and buttery components. It's suitable as a casual dessert for family gatherings or any occasion needing a fruity sweet treat.
