  • 2 egg large
  • 1/4 cup lemon juice fresh
  • 1-2 tablespoons lemon zest

  • 2 ½ cups all-purpose flour

  2. With the mixer on low speed, add eggs, one at a time, and mix until blended.
  3. Add lemon juice and zest, mixing until combined.
  4. Add flour and baking powder. Stir in until just combined. Don't overmix.
  5. Cover and chill dough for 30 minutes.
  6. Preheat oven to 375 F. Line 2 baking sheets with parchment paper or silicone baking mat.
  7. Drop by 1.5 tablespoon scoops (a medium cookie scoop) onto prepared baking sheets. Bake until edges are firm with no color, about 7-10 minutes.
  8. Let cool on baking sheets for 5 minutes, then transfer to cooling racks and let cool.
