Description
Lemon Cookies bring together softened butter, granulated sugar, and lemon zest to create a creamy base that carries the lemon flavor through the cookie. Adding both lemon and vanilla extracts deepens the aromatic profile. Leavening agents such as cream of tartar and baking soda contribute to a soft yet lightly crisp texture upon baking. Scooping the dough into smooth balls and rolling them in powdered sugar forms a thin, sweet coating once baked.
The result is a cookie with a tender bite and bright citrus notes that complement tea or coffee well. Proper zesting to avoid the bitter pith is important to maintain a clean lemon taste. Cooling on the baking sheet lets the cookies set without drying out.
For best results, use two full lemons to obtain the needed zest. Room-temperature ingredients promote even mixing and texture. Storing leftovers in an airtight container will maintain their softness for several days.
Ingredients
- 1 cup butter softened to room temperature, unsalted
- 1 ½ cups granulated sugar
- 2 ½ Tablespoons lemon zest
- 1 egg room temperature preferred, large egg plus 1 yolk
- 1 teaspoon lemon extract
- ¼ teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons cornstarch
- 1 ½ teaspoons cream of tartar
- ¾ teaspoon baking soda
- ½ teaspoon salt
- powdered sugar about ½ cup, for rolling cookies
Instructions
- Preheat oven to 350F (175C) and line a cookie sheet with parchment paper.
- In a large bowl using an electric mixer (or use a stand mixer!), combine butter, sugar, and lemon zest. Beat until creamy and well-combined.
- Stir in egg and egg yolk, lemon extract, and vanilla extract until completely combined.
- In a separate bowl, whisk together flour, cornstarch, cream of tartar, baking soda, and salt.
- Gradually (with mixer on low-speed), add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl to ensure all ingredients are completely incorporated.
- Scoop cookie dough by level 1 ½ Tablespoon-sized scoop and roll between your palms until you have a smooth ball. Roll ball through powdered sugar and place on baking sheet. Repeat with remaining dough, spacing cookies at least 2” apart.
- Bake on 350F for 9-11 minutes and allow to cool completely on baking sheet. Enjoy!
Notes
- Use two whole lemons to obtain the required lemon zest, avoiding the bitter white pith.
- Let the cookies cool completely on the baking sheet for best texture.
- Store cookies in an airtight container to keep them soft.
