Lemon Cream Cheese Bars Recipe
Description
The crust combines crushed vanilla wafers with all-purpose flour and brown sugar, bound by cold butter cut in until crumbly, then pressed into a lined pan and baked briefly to set. The filling is prepared by beating softened cream cheese and sugar until smooth, incorporating eggs and flour, then stirring in lemon juice, baking powder, and part of the lemon zest. This filling is poured over the warm crust and baked until set.
Once baked, the bars are cooled completely, refrigerated for at least two hours to firm up, and topped with powdered sugar and the remaining lemon zest. This creates bars with a bright lemon flavor balanced by the rich cream cheese and crisp crust texture.
These bars can be served chilled or at room temperature as a dessert or sweet snack.
Ingredients
- 24 vanilla wafers crushed
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar packed
- 1/4 cup butter cold
- 8 oz cream cheese softened
- 1 cup sugar
- 2 egg
- 2 tbsp all-purpose flour
- 2 tbsp lemon divided, zest
- 1/4 cup lemon juice freshly squeezed
- 1/4 tsp baking powder
Instructions
- Line a 9x11 inch baking pan with parchment paper over sides of pan.
- If you want the wafer crumbs fine, place in a food processor or place in a Ziploc bag and crush with a rolling pin.
- In a bowl, combine wafer crumbs, ½ cup flour and brown sugar. Cut in butter until mixture crumbles; press firmly onto bottom of your pan. Bake at 350 for 15 min.
- In the meantime, beat cream cheese and sugar with electric mixer until blended. Add your eggs and flour; mix well. Blend in lemon juice, baking powder and half the lemon zest;
- Pour over crust. Bake for 25 to 28 minutes or until center has set. Cool completely.
- Cover and refrigerate at least 2 hours. Sprinkle with powdered sugar and remaining lemon zest.
