Lemon Curd Cake 

Lemon flavoring can be so delicious because of the tangy flavor it adds to a recipe. This Lemon Curd Cake is a delicious cake recipe topped with a lovely lemon curd topping. The two textures blend so well together to create a soft and gooey consistency.

Ingredients

  • 1 cup butter room temperature
  • 1 cup water
  • 2 ¼ cups cake flour
  • 2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 egg room temperature, beaten
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 cup lemon curd

Instructions

  1. Preheat oven to 375 degrees
  2. Prepare a 9’ springform round baking pan.
  3. Line the baking pan with a parchment paper cut to fit.
  4. In a medium-sized bowl add the cake flour, and sugar, baking soda, and salt whisk to combine.
  5. Add the egg, sour cream, and vanilla extract to the flour and mix to combine.
  6. In a medium saucepan, over medium add the butter and water.
  7. Stir to combine until fully melted and hot.
  8. Slowly begin to add the butter mixture to the flour mixture and mix to combine.
  9. NOTE: The batter will be VERY thin.
  10. Pour the batter into the prepared springform pan.
  11. Bake for 20-24 minutes until it's fully baked.
  12. Cool completely.
  13. Top your cake with lemon curd and spread evenly.
  14. Garnish with whip cream.
  15. ENJOY!
