Description
This Lemon Curd starts with zesting three lemons and pulsing the zest with sugar to combine flavors finely. Butter at room temperature is creamed with this lemon sugar mixture. Eggs are added one at a time, then lemon juice and salt are mixed in for balanced acidity and seasoning.
The mixture is cooked on low heat for about 10 minutes with constant stirring to thicken without curdling. Once thickened, it is removed from heat and cooled or refrigerated, resulting in a smooth, tangy curd with creamy texture suitable for spreading, filling, or topping baked goods.
Ingredients
- 3 lemon plural
- 1 1/2 cups sugar
- 1/4 lb butter room temperature, unsalted
- 4 egg extra large
- 1/2 cup lemon juice 3-4 lemons
- 1/8 tsp kosher salt
Instructions
- Remove the zest of 3 lemons with a grater or zester. Add to a food processor, and with the steel blade, pulse with sugar until fine.
- In a mixer, cream the butter and beat in the sugar/zest mixture.
- Add eggs 1 at a time, then add lemon juice and salt and mix to combine.
- Add to a saucepan on low heat. Cook, stirring constantly, for 10 minutes or until thick.
- Remove from heat and cool or refrigerate.
