Lemon Garlic Shrimp and Zucchini Noodles - Zoodles

This Lemon Garlic Shrimp and Zucchini Noodles recipe combines sautéed jumbo shrimp with fresh garlic, lemon zest, and juice, served over tender zucchini noodles. The shrimp cook quickly in olive oil with a touch of salt and pepper, then mingle with the lightly sautéed zoodles, creating a bright and lightly textured dish. It’s a flavorful meal that highlights fresh, simple components and is best served immediately.

Description

The dish starts by sautéing shelled and deveined jumbo shrimp in olive oil with minced garlic, salt, and pepper. The shrimp are cooked until just done, ensuring a succulent texture and preventing overcooking. After removing the shrimp, zucchini noodles are added to the same skillet, quickly stirred and softened over a few minutes.

Once the zoodles are tender yet crisp, the shrimp are returned to the pan along with fresh lemon juice and zest. A brief additional cooking step allows these bright citrus flavors to meld with the garlic and shrimp, imparting freshness and a slight tanginess. The result is a light, aromatic meal with the shrimp’s firmness contrasting the delicate zucchini noodles.

This recipe is designed to be served immediately to preserve the zucchini noodles’ texture and the shrimp’s juiciness. It suits a light lunch or dinner when a fresh, seafood and vegetable combination is desired without heavy sauces.
