Lemon Icebox Pie

Lemon Icebox Pie features a crisp graham cracker crust filled with a creamy blend of cream cheese, sweetened condensed milk, and fresh lemon juice and peel. The pie’s texture is smooth and tangy, cooling in the refrigerator until set. It offers a refreshing citrus flavor balanced with the richness of cream cheese, ideal for a light dessert after meals.

Description

The Lemon Icebox Pie combines a crunchy graham cracker crust made with brown sugar and melted butter, chilled to set firmly. The filling blends softened cream cheese and sweetened condensed milk to create a smooth base, enhanced by freshly squeezed lemon juice and grated lemon peel for bright citrus notes. The pie is refrigerated for several hours to develop a firm, creamy texture that slices cleanly. Served chilled, it provides a cool, slightly tart dessert offering a contrast to the sweet, buttery crust.

The balance of sweet and tangy makes it suitable as a refreshingly light finish to a meal or a summer snack. It can be topped with whipped cream for added richness and visual appeal.

Ensuring the cream cheese is fully softened before mixing is important to avoid lumps, and the pie should be kept refrigerated covered when not serving to maintain texture.
