Lemon Orzo Salad Recipe

There's so much to love about Lemon Orzo Salad! Pasta salad recipes are ideal for potlucks, quick and easy to make and packed with so much flavor. Skip the feta cheese to make it vegan and dairy-free.

Ingredients

Servings
  • 12 ounces orzo pasta dry
  • 1 ½ cup cherry tomato halved or grape tomato
  • 1 cup cucumber English, chopped
  • 1 cup chickpeas drained & rinsed, canned
  • ¼ cup (1 ¼ ounces) feta cheese crumbled
  • 6 kalamata olives quartered, pitted
  • 5 basil thinly sliced, large leaves
  • 5 mint thinly sliced, leaves
  • 3 tablespoons parsley flat-leaf, minced

The dressing:

  • ¼ cup lemon juice fresh
  • 3 tablespoons extra virgin olive oil
  • 1 ¼ teaspoons agave nectar (or honey - not vegan)
  • ¾ teaspoon oregano dried
  • ½ teaspoon kosher salt

Instructions

  1. Bring a large pot of water to a boil. Salt the water generously. Add the orzo and cook until al dente, according to package directions. Drain into a colander and rinse well with cold water. Drain well, giving the colander a shake to get rid of extra water. Transfer to a serving bowl.
  2. Add the tomatoes, cucumber, chickpeas, feta cheese, olives, basil, mint and parsley. Stir to combine.
  3. Toss with the dressing. Serve immediately, or cover and store in the refrigerator.

The dressing:

  1. In a medium bowl, whisk together the lemon juice, olive oil, agave nectar, oregano and salt.
