Lemon Pepper Salmon {with optional Garlic Parmesan Asparagus}

This Lemon Pepper Salmon recipe features skin-on salmon fillets brushed with a mix of lemon zest, juice, garlic, Dijon mustard, and spices, then baked with asparagus tossed in olive oil, garlic, and seasoned before finishing with Parmesan cheese. The salmon bakes to a tender, flavorful finish, complemented by the roasted, garlicky asparagus with a cheesy topping.

Description

The salmon is prepared with a seasoning blend including lemon zest and juice, Dijon mustard, onion powder, salt, and pepper to highlight its natural flavor with a bright, zesty kick. Garlic adds aromatic depth. Baking at 400°F allows the salmon to cook through while maintaining moisture and tender flesh. Thin lemon slices on top infuse a gentle citrus aroma during cooking.

Asparagus is seasoned separately with olive oil, minced garlic, salt, and pepper, then baked alongside the salmon. Tossing halfway through cooking ensures even roasting. A topping of finely shredded Parmesan cheese added before the final minutes of baking melts on the asparagus, contributing a savory richness and slight crispiness.

This combination makes a balanced meal with protein and vegetable in one pan, during about 15 to 20 minutes of cooking time. It's ideal for straightforward weeknight dinners offering fresh flavors. The recipe suggests cutting wide fillets into portions to create an even baking surface and create space for asparagus.
