Lemon Pepper Wings

Lemon Pepper Wings feature crispy deep-fried chicken wings coated in a buttery lemon pepper sauce with fresh lemon juice and zest. The wings have a seasoned crust with paprika, garlic powder, and salt for a balanced savory flavor, while the lemon pepper sauce provides a bright, tangy finish. These wings are ideal for a flavorful snack or gathering dish, delivering a crunchy texture paired with zesty, buttery coating.

Description

This recipe seasons chicken wings with a blend of yellow mustard, hot sauce, kosher salt, paprika, and garlic powder before dredging them in a mixture of all-purpose flour, cornstarch, salt, and paprika to create a crisp outer layer when fried. The wings are deep-fried at 350-360°F until golden brown, ensuring a crunchy exterior and tender interior.

The lemon pepper sauce is crafted by melting unsalted butter and mixing in lemon pepper seasoning, fresh lemon juice, and lemon zest, forming a warm, flavorful glaze. Tossing the fried wings gradually in this sauce helps evenly coat them without sogginess. A final sprinkle of lemon pepper seasoning enhances the citrus-pepper balance.

This dish works well served as an appetizer, snack, or party food, offering a balance of savory, tangy, and mildly spicy elements. It pairs nicely with dips or fresh vegetable sides to contrast the richness.

Maintaining oil temperature with a thermometer is crucial for even frying, and warming the sauce if it solidifies prevents uneven coating. Avoid overheating the sauce to prevent soggy wings.

Ingredients

Servings

For the chicken

  • 2 lbs chicken wings about 12- 14 wings!
  • 2 tablespoon yellow mustard
  • 1 tablespoon hot sauce
  • teaspoon kosher salt
  • teaspoon paprika
  • 1 teaspoon garlic powder

For the batter

  • cups all-purpose flour
  • ¾ cup cornstarch
  • 2 teaspoons kosher salt
  • 2 teaspoons paprika

For the lemon pepper sauce

  • 8 oz butter 1 stick, unsalted
  • 1 tbsps lemon pepper seasoning plus a little extra to sprinkle on the end
  • lemon juice of ½ lemon
  • lemon zest of ½

For frying

  • 6-8 cups neutral frying oil like canola, vegetable or peanut

Instructions

  1. In a large bowl, combine the chicken, mustard, hot sauce, and spices. Mix well and set aside.
  2. In another bowl, combine flour, cornstarch and spices. Mix well.
  3. Dip your chicken into your flour dusting off any excess than place on a aprchment lined baking sheet or plate and set aside.
  4. Next, preheat your oil to 350-360℉ . While your oil heats, prepare your sauce.
  5. In a large skillet over low heat, melt your butter. Slowly add in lemon pepper seasoning, lemon juice, and lemon zest. Stir until combined. Shut off the heat, but keep the skillet on the burner to keep it warm while you fry your chicken.
  6. Next, Deep fry your wings for 8-10 minutes until golden brown
  7. Transfer the wings to a parchment-lined baking sheet to soak up any excess oil. Then, place the wings in a bowl and gradually pour the sauce over them. Toss the wings in the bowl to ensure they are evenly coated. I like to sprinkle a little lemon pepper seasoning on at the end just for that little razzle dazzle!

Notes

  • Use a cooking thermometer to keep oil temperature steady between 350-360°F for optimal frying results.
  • If the lemon pepper sauce firms up during frying, gently reheat it to restore pourable consistency without overheating.
  • Gradually toss wings in the sauce to prevent sogginess and ensure even coating.
