Lemon Rice Krispie Treats
Description
Lemon Rice Krispie Treats start with browning salted butter in a pot, developing a nutty flavor different from simple melted butter. Mini marshmallows are then melted into the browned butter to create a smooth syrup infused with lemon extract for a fresh citrus note. When the Rice Krispies cereal is folded in, the mixture is quickly pressed into a prepared pan to set. Cooling allows the bars to firm up into a chewy and crispy texture.
The addition of lemon extract distinguishes these treats from the typical sweet marshmallow flavor by adding brightness and a hint of tartness. Optionally, they can be topped with lemon zest, icing, or white chocolate drizzle, enhancing the lemon profile. The bars are easy to slice into portions for a portable dessert or snack.
Notes suggest doubling the recipe to use a larger pan and offer an option to keep some marshmallows unmelted for texture variation. Storing in an airtight container maintains freshness for up to three days. These details support easy preparation and customization according to taste.
Ingredients
- 1/4 cup butter salted
- 3 cups mini marshmallows
- 1/2 teaspoon lemon extract
- 4 cups Rice Krispies cereal
Instructions
- Spray an 8x8 pan with nonstick cooking spray and set aside. Also, spray a medium pot and a rubber scraper with nonstick cooking spray.
- In a medium pot, melt butter over medium-low heat. Continue to cook butter, swirling occasionally until golden brown, 7 minutes or so. Stir in marshmallows and stir until completely melted. Stir in lemon extract then remove from heat.
- Pour in cereal and stir to coat in melted marshmallows. Once coated, pour the mixture into the prepared 8x8 pan.
- Using lightly greased fingers, press bars down to flatten the top. Cool 15-30 minutes before cutting into squares. Top with any desired topping: lemon zest, lemon icing, white chocolate drizzle, etc.
- Store in an airtight container for up to 3 days to maintain freshness.
Notes
- Double the recipe to fit a 9x18-inch pan for larger batches.
- Top bars with lemon zest, lemon icing, or white chocolate drizzle to enhance the lemon flavor.
- Reserving 1/2 cup of marshmallows and adding them at the end gives texture with some partially melted bits.
- Store treats in an airtight container for up to 3 days to keep them fresh and chewy.
