  • 4 ounce salmon 24 ounces total, fillets with the skin on
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground
  • 1 tablespoon butter unsalted
  • 1 tablespoon olive oil
  • ½ teaspoon garlic minced
  • ½ cup chicken broth
  • 3 tablespoons lemon juice fresh
  • 3 tablespoons capers drained
  • ½ cup heavy whipping cream

Instructions

  1. Pat 4 6-ounce salmon fillets with the skin on dry with paper towels, and use 1 teaspoon salt and ½ teaspoon ground black pepper to season them on both sides.
  2. Heat 1 tablespoon unsalted butter and 1 tablespoon olive oil in a 12-inch skillet over medium heat, then add the salmon fillets skin down. Cook for 4-5 minutes before flipping the fillets over and cook for another 4-5 minutes. Remove the fillets from the skillet and reserve on a plate.
  3. Add ½ teaspoon minced garlic to the skillet and cook for 1 minute. Add ½ cup chicken broth and bring to a boil. Reduce the heat until the broth is simmering, and simmer for 3-4 minutes until the broth has reduced by half. Stir in 3 tablespoons fresh lemon juice and 3 tablespoons drained capers.
  4. Add ½ cup heavy whipping cream and bring to a simmer for two minutes. Add the salmon fillets back to the pan. Taste the sauce, and add salt and pepper if needed. Serve immediately.
