Description

This recipe starts by pulsing flour, sugar, salt, and chilled unsalted butter in a food processor until the mixture resembles coarse crumbs. Lemon zest, fresh lemon juice, and ground cardamom are stirred in before adding milk to form a soft dough. The dough is kneaded briefly then rolled to about 2cm thickness and cut into 6cm rounds.

Arranged on a floured baking tray, the scones are brushed with milk to encourage browning and then baked in a 180°C oven until golden, about 18-20 minutes. The finished scones are tender with a light crumb, the lemon providing brightness balanced by the subtle warmth of cardamom spice.

  • 2 cups self-raising flour 225g
  • 2 tbsp caster sugar
  • ½ tsp salt
  • 1/4 cup butter chilled, unsalted, 55g
  • lemon zest of 1
  • 1 tbsp lemon juice
  • 1/2 tsp ground cardamom
  • 1/2 cup milk plus extra for brushing, 125 ml

  1. Preheat the oven to fan assisted 180C / 200C / 400C / gas 6.
  2. Mix together flour, sugar and salt and place in a food processor. Add in the cold butter and whizz until it reaches a breadcrumb consistency.
  3. Transfer the mixture into a bowl and stir in the lemon zest, lemon and ground cardamom. Make a well in the centre, pour in the milk and mix into a dough. Knead for a minute to combine all the ingredients.
  4. Then transfer the dough onto a lightly floured surface and pat out till the mixture is about 2cm thick. Cut out 6cm rounds using a pastry cutter. You might need to reform the trimming and cut out a few more.
  5. Place the scones onto a lightly flowered baking tray, brush them with some milk and bake for 18-20 minutes, until golden.
  6. Serve with some clotted cream and jam.
