  • cup Parmesan Cheese shredded
  • ½ cup lemon juice 2-3 lemons, fresh
  • 2 tablespoons lemon divided, zest
  • ¼ cup Italian parsley chopped, fresh
  • 1 teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Cook the pasta in a large pot of salted water according to package directions until al dente.
  2. While the pasta cooks, whisk the oil, Parmesan, 1 tablespoon of lemon zest, and lemon juice together in a large serving bowl.
  3. Drain the pasta and transfer it to the serving bowl with the lemon sauce. Toss to coat the pasta.
  4. Add the pepper and salt and toss. Adjust the seasoning to taste.
  5. Add the chopped parsley and toss. Top with the remaining lemon zest.
