Lemon Tea Cookies

Lemon Tea Cookies are tender, buttery cookies flavored with fresh lemon juice, zest, and a hint of vanilla. Rolled first in confectioners' sugar after baking, they develop a sweet, delicate crust. Their soft texture and bright lemon profile make them suitable for tea time or dessert.

Description

The Lemon Tea Cookies combine all-purpose flour, baking powder, salt, softened butter, confectioners' sugar, egg yolk, fresh lemon juice and zest, and vanilla extract. After mixing the dry and wet ingredients, the dough is gently formed and rolled into small balls. Baking at moderate heat yields gently golden bottoms and soft centers.

The key flavor derives from the fresh lemon juice and zest balanced with sweetness from sugar. Rolling the warm cookies in confectioners' sugar creates a soft, snowy coating that complements the citrus notes. The cookies’ crumb is tender rather than crisp.

These cookies pair well with tea or coffee due to their mild sweetness and lemon brightness. They can be stored in airtight containers and kept fresh for up to two weeks, making them convenient for preparing ahead or gifting.

The recipe notes emphasize using fresh lemon for best flavor and advise rolling the cookies warm for better sugar coating adherence.

Ingredients

Servings
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter softened (2 sticks
  • 1 cup confectioners' sugar plus 2 more cups for rolling
  • 1 egg yolk
  • 1/4 cup lemon juice freshly squeezed
  • 1 heaping tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  2. In a small bowl, whisk flour, baking powder and salt; set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and 1 cup of the sugar until light and fluffy, about 3 minutes. On low speed, mix in the egg yolk, lemon juice, zest and vanilla until incorporated. Add the dry ingredients, mixing on low speed just until combined. If the dough is crumbly, use your hands to kneed the dough gently until it comes together and forms a ball. Roll the dough into 1" sized balls and place 1" apart on the prepared baking sheets. Bake for 18 to 20 minutes, or until lightly golden brown.
  3. Remove from oven and allow to cool slightly. While the cookies are still warm, roll them in the remaining 2 cups confectioners' sugar and place on a wire baking rack to cool completely. Store in an airtight container for up to 2 weeks.

Notes

  • Use freshly squeezed lemon juice and zest for the clearest lemon flavor.
  • Roll cookies in confectioners' sugar while still warm to ensure even coating.
  • Store cookies in an airtight container for up to two weeks.
