Description
This recipe for Lemongrass Wings starts with finely grated white lemongrass and pounded stalks to release strong aromatic oils. Chicken wings are coated in a marinade of fish sauce, honey, smashed garlic, lemongrass, and black pepper, then refrigerated overnight to deepen the flavors. Grilling until the wings become golden brown and charred develops smoky notes and crispy skin.
The resulting wings offer a balance of citrusy lemongrass fragrance, salty richness from the fish sauce, slight sweetness from honey, and mild peppery heat. They make a distinctive appetizer or main dish with complex flavors unmatched by conventional wing recipes.
Alternatively, baking at 350°F followed by broiling to brown the skin can be used if a grill is not available. Since fish sauce adds saltiness, adjustments can be made depending on quantity. The wings should be well coated and marinated to maximize taste.
Ingredients
- 2 tablespoons lemongrass grated
- 2 talks lemongrass pounded
- 1 1/2 lbs (750g) chicken wings party wings, small
- 3 tablespoons fish sauce
- 5 cloves garlic peeled and smashed
- 1 tablespoon honey
- 1/4 teaspoon black pepper coarsely cracked
Instructions
- Use a grater, such as a Microplane, to grate the white part of the lemongrass until you have about 2 tablespoons. Keep the rest of the lemongrass and cut it into 4-inch (10 cm) lengths. Use the back of a knife to pound and smash the lemongrass to release its aroma and flavor.
- Rinse the chicken wings under cold water and pat them dry with paper towels. Transfer the wings to a large Ziploc bag and add all the ingredients. Combine everything well, ensuring the wings are nicely coated with the fish sauce and lemongrass mixture. Let them marinate in the fridge overnight.
- Fire up the grill the next day. Grill the wings until they are golden brown and nicely charred on both sides. Serve immediately.
Notes
- Adjust fish sauce amount carefully as it is salty; it does not need to scale exactly with more wings.
- For a baked alternative, cook wings at 350°F until browned, then broil 1–2 minutes for char.
