Description
The Lime and Avocado Tart starts with a crust composed of shredded coconut, chopped pecans, chopped Medjool dates, lime zest, and a pinch of sea salt, processed until sticky and then pressed into a springform pan. The tart filling is made by blending ripe avocados with fresh lime juice, maple syrup or agave, coconut nectar or agave, coconut oil, and additional lime zest to achieve a creamy consistency. After pouring the filling over the crust, the tart is frozen for a minimum of two hours to set. When ready to serve, the tart is allowed to soften slightly at room temperature to develop a pudding-like texture. This preparation gives a balance of the nutty, chewy crust and the smooth, tart filling, making for a fresh and unique dessert option. Leftovers are stored in the freezer to maintain the tart's firmness and freshness.
Ingredients
Crust
- 1/2 cup coconut shredded, unsweetened
- 1 cup pecans chopped
- 1 cup Medjool dates about 12 dates
- 1-2 teaspoons lime zest
- pinch of sea salt
Tart Filling
- 4 avocado about 1 1/2 cups of avocado puree
- 1/2 cup lime juice fresh squeezed
- 1/2 cup coconut nectar or agave
- 1/2 cup maple syrup or agave
- 2 Tablespoons coconut oil
- 2 teaspoons lime zest
Instructions
- Process the crust ingredients (coconut, pecans, dates, lime zest and sea salt) in a food processor or mini chopper until the dates have turned into sticky paste holding the crust ingredients together. Take mixture out of the processor and press evenly into your springform pan. Place pan in freezer while you make the tart filling.
- While the crust is setting in the freezer, blend ingredients for the filling (avocados, lime juice, agave or maple syrup, coconut oil and lime zest) in a high-speed blender or food processor until creamy.
- Pour the avocado filling over the crust and use a spoon to make sure the filling is even and smooth.
- Place pan in the freezer to set up, at least 2 hours, but can be overnight. Take out of freezer, remove the springform pan, let sit out for 10-15 minutes, cut into slices and serve. The longer it sits out, the filling will soften and become more like pudding. It still tastes amazing, but not as firm. Store any leftovers back in the freezer.
Notes
- Non-vegan option: substitute honey for the filling sweeteners if a vegan diet is not required.
- Allow the tart to sit out 10-15 minutes before slicing to soften the filling for easier serving.
