Lime Bars
Description
This recipe creates lime bars featuring a crisp shortbread crust composed of butter, flour, powdered sugar, and salt. The crust is baked until just golden, establishing a firm yet tender base. The topping combines granulated sugar, flour, baking powder, eggs, and fresh lime juice, providing a light, tart custard that sets in the oven while retaining a slight wobble indicating juiciness rather than dryness.
The filling's fresh lime juice lends a bright, tangy flavor that contrasts the richer base. After baking, cooling the bars completely allows the filling to firm appropriately. Dusting with powdered sugar before serving adds a touch of sweetness and visual appeal. These bars cut neatly into squares, making them easy to portion and serve as a snack or dessert.
