Lime Butter Salmon in Foil with Summer Veggies is grilled to tender and flaky perfection. The foil seals in the lime butter flavor and will be one of the BEST things that you eat!

Ingredients
- 4 (4-ounce) salmon fillets
- 2 small zucchini chopped
- 1 pound asparagus chopped
- 2 small yellow squash chopped
- 1 small red onion thickly diced
- 1 sliced red pepper
- 6 tablespoons melted unsalted butter
- 1 tablespoon lime juice
- Zest of one lime
- salt and pepper
- 1 lime
- Fresh parsley for garnish
Instructions
- Heat the grill to medium heat. Cut 4 sheets of heavy-duty foil, large enough to wrap around the salmon and veggies.
- Place each 4 (4-ounce) salmon fillets on the center of each aluminum foil sheet and divide the 2 small zucchini chopped, 1 pound asparagus chopped, 2 small yellow squash chopped, 1 small red onion thickly diced, and 1 sliced red pepper into each packet.
- In a small bowl add 6 tablespoons melted unsalted butter, 1 tablespoon lime juice, and zest of one lime and salt and pepper, and mix. Pour evenly into each packet.
- Cut the 1 lime into wedges and add a wedge to each packet. Bring the sides of the foil up and around the salmon and veggies and seal the edges, leaving room in the packets for heat circulation and expansion.
- Place the salmon packets onto the grill and grill for 13-15 minutes flipping at about 7 minutes. To serve, carefully open packets and add fresh parsley for garnish.
Notes
- BAKE at 400 degrees for 25 minutes.
