Lime Frosting Recipe
Description
This Lime Frosting recipe uses room temperature unsalted butter beaten initially to incorporate powdered sugar gradually, preventing sugar dust from flying out of the bowl. Fresh lime juice and zest along with a small amount of kosher salt balance the frosting's sweetness with a bright citrus note and slight saltiness. After the ingredients are combined, the frosting is whipped at increasingly higher speeds to achieve a smooth and fluffy texture.
The finished frosting pairs well with vanilla or fruit-flavored cakes and can be spread on cupcakes or layered cakes. The lime zest adds a subtle texture and fragrance while the juice provides crisp freshness within the buttercream consistency.
The recipe yields about two cups of frosting, which can be refrigerated for up to a week or frozen for longer storage. Prior to use from cold storage, let it soften slightly and briefly re-whip to restore texture.
Ingredients
- 1½ cups butter room temperature (3 sticks, unsalted

- 1 lime juiced and zested (about 2 tablespoons juice and 2 teaspoons zest)
- ⅛ teaspoon kosher salt
Instructions
- In the bowl of a stand mixer fitted with the whisk attachment, combine all of the ingredients. Whip on low until the powdered sugar is about halfway incorporated, about 1 minute. If you whip at a higher speed before the powdered sugar is a little incorporated, it will fly out of the bowl.
- Increase the mixer speed to medium high and whip for another 30 seconds before increasing it to high. Whip for 3-4 minutes to allow the powdered sugar to dissolve into the butter and for it to get fluffy.
