This simple Lime Syrup transforms cocktails, mocktails, desserts, and pancakes with zesty sweetness. You only need 15 mins + 2 ingredients.

Ingredients
- ¾ cup sugar 150g
- ½ cup lime juice 120ml - approx 4 limes
- ¾ cup water 180ml
Instructions
- Add the sugar, lime juice and water to a pot.
- Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove from the heat and cool slightly.
- Place a sieve over a bowl and carefully pour in the syrup to strain out any 'bits'.
- Allow the mixture to cool slightly, then pour into a sanitized bottle or jar. The syrup will thicken as it cools.
- Refrigerate for up to 2 weeks.
