Lo Mein with Vegetables
Description
Lo Mein with Vegetables features dry lo mein noodles boiled and rinsed before frying with garlic and a mix of fresh shiitake mushrooms, bok choy, and red bell pepper strips. The noodles are tossed in a sauce combining soy sauce, oyster sauce, dark soy, sugar, sesame oil, white pepper, and water, which thickens slightly when cooked in the pan. This method ensures the noodles absorb a balanced savory flavor without becoming soggy. White sesame seeds sprinkled on top add a subtle textural finish.
The mixture is cooked in neutral oil for a mild background flavor, allowing the earthy umami of the mushrooms and the freshness of the vegetables to stand out. The result is a noodle dish with tender-crisp vegetables and a harmonious sauce coating each strand.
Serve immediately after cooking to maintain the noodles’ texture. It pairs well with chili garlic sauce for added heat or as a complement to other Asian-inspired dishes. Its plant-based ingredients make it suitable as a versatile meal component.
For best results, rinse cooked noodles under cold water to remove excess starch and prevent clumping. Adjust vegetable quantities or sauce ingredients to taste if desired, and use a sturdy skillet or wok to facilitate quick stir-frying.
