Description

The casserole starts by mixing ground beef with finely chopped onion, dry seasoned breadcrumbs, milk, and an egg to bind it together, then seasoning with salt and pepper. The mixture is pressed into a baking dish and cooked uncovered to set the meat. Excess fat is drained before topping it with creamy mashed potatoes made from boiled peeled potatoes mashed together with butter, milk, salt, and pepper.

On top of the mashed potatoes, shredded cheddar cheese and cooked crumbled bacon bits are sprinkled. The dish is returned to the oven to bake until the cheese bubbles and browns slightly and the bacon crisps.   • 1 1/2 pounds ground beef , (85/15)
  • 1/4 yellow onion , finely chopped
  • 2/3 cup dry breadcrumbs seasoned
  • 1/3 cup milk whole
  • 1 large egg , lightly beaten
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper coarse ground
  • 2 pounds potato peeled and cut into 1" chunks
  • 1/3 cup  butter unsalted
  • 1/2  cup  milk whole
  • 1 teaspoons  kosher salt
  • 1/4  teaspoon  black pepper coarse ground
  • 1/2 cup bacon bits , cooked and crumbled
  • 1 cup cheddar cheese , shredded

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, gently combine beef, onion, breadcrumbs, milk, egg, salt and pepper then press into a 9x9 baking dish.
  3. Bake uncovered for 15 minutes, then remove and drain any excess fat.
  4. While the meatloaf is cooking add potatoes with just enough water to cover to a pot and bring to a boil on high heat. Cook for 15 minutes.
  5. Drain the water and add the milk, butter, salt and pepper mashing it all together until creamy.
  6. Spread over the meatloaf and top with cheese and bacon.
  7. Bake for and additional 15 minutes, until bacon is sizzling and cheese is bubbling and the mashed potatoes are slightly crispy.
