Loaded Potato Soup

Loaded Potato Soup is a hearty blend of diced potatoes, carrots, and onion in a creamy broth thickened with flour and enriched with milk and sour cream. The soup is seasoned with bay leaves, thyme, dried chives, salt, and black pepper, then topped with cheddar, crispy bacon, and fresh chives. It offers a smooth, thick texture with chunky vegetables and rich savory toppings for a comforting meal.

Description

The recipe begins by sautéing diced onion and carrot in butter until slightly tender. Flour is sprinkled over to form a roux-like paste before whisking in chicken stock, which thickens the soup base. Frozen diced potatoes (hash browns) are added along with bay leaves, thyme, salt, and pepper. The soup simmers covered until the potatoes and carrots soften.

Milk, sour cream, and dried chives are stirred in last to add creaminess and subtle herbal flavor. The soup is kept warm without boiling to preserve the dairy ingredients without curdling. It results in a thick, creamy soup with tender vegetables and a mild herbaceous note.

The soup is ladled into bowls and finished with toppings such as grated cheddar cheese, crumbled bacon, additional fresh chives, and extra sour cream. These toppings add texture and depth of flavor, balancing the soup’s creamy base. This soup is suitable as a filling appetizer or main course, especially in cooler weather.
