Loaded Taco Grilled Cheese

Loaded Taco Grilled Cheese is a deliciously crispy way to combine two of my favourite food groups - grilled cheese and tacos! Crunchy grilled bread with gooey melted cheese and a hit of Mexican flavour.

Ingredients

Servings

Taco Mince:

  • 1 medium onion , chopped
  • 2 large tomatoes chopped, ripe
  • 16 oz ground beef extra lean, prepared
  • 1 packet taco seasoning mix Old El Paso brand
  • ¼ cup water

Grilled Cheese:

  • 8 lices bread of choice
  • 1 large avocado smashed
  • 1 tablespoon lemon juice optional
  • 1 pinch salt to season
  • ½ cup spinach leaves
  • 1 cup ground beef divided, prepared taco mince
  • 2 large tomatoes chopped, ripe
  • ½ cup mozzarella cheese or cheddar, low fat or light
  • ¼ cup tomato salsa taco style
  • ¼ cup sour cream optional, light or low fat, or natural Greek yoghurt

Instructions

  1. In a large nonstick pan, fry onion until transparent with cooking oil spray. Add tomatoes and cook until soft. Add mince and cook while breaking up with a wooden spoon. Add the seasoning and water and cook Taco mince to packet instructions. Set aside.

Grilled Cheese:

  1. Combine smashed avocado, salt to season and lemon juice. Mix well.
  2. Build sandwiches with 'guacamole,' spinach leaves, ¼ cup taco mince per sandwich, tomatoes, cheese, salsa and sour cream/yoghurt (if including). Top with bread, and spray a little spray oil onto pan. Fry until browned on both sides, cooked through, and cheese has melted.

Notes

  • To get the perfect crispy golden bread when grilling, put a light layer of butter on the outside of each bread slice before assembling your sandwich. It will fry up on the outside when grilling in the pan.
