Description
Lobster Bisque begins with sautéing finely chopped onion, celery, and carrot in butter until softened, building a flavorful base. Garlic and tomato paste are added and cooked briefly to develop depth. Flour is sprinkled in to form a roux, which thickens the soup once seafood stock and dry white wine are added. Fresh bay leaf and thyme sprigs lend herbal notes during simmering.
After about 30 minutes of simmering, the broth is pureed until smooth for a velvety texture. The bay leaf and thyme are removed, and chunks of thawed lobster tail are gently cooked in the bisque for several minutes until done. The final soup balances the sweetness of lobster with savory vegetables and aromatic herbs, accompanied by the richness from butter and tomato paste.
Garnishing with chopped chives adds a mild onion freshness and visual appeal. This bisque serves well warm as an elegant appetizer or light main course, offering a refined seafood soup experience.
Ingredients
- 4 oz lobster tails (thawed if frozen and removed from shell)
- 2 tbsp butter
- 1 yellow onion finely chopped, medium
- 2 celery finely chopped, stalks
- 2 carrot peeled and finely chopped
- 1/2 teaspoon salt kosher salt, to taste
- 1/2 teaspoon black pepper kosher salt, to taste
- 2 cloves garlic (minced)
- 2 tbsp tomato paste
- 2 tbsp all-purpose or gluten-free flour
- 5 cups fish stock or seafood stock
- 1/2 cup white wine dry
- 1 bay leaf
- 3 thyme sprigs, fresh
- chives for garnish, chopped
Instructions
- Over medium heat, heat butter in a large pot.
- Add onion, carrots and celery. Cook for 6 to 7 minutes, or until soft.
- Add salt and pepper to taste and stir in garlic and tomato paste. Cook for 2 minutes or until tomato paste covers the vegetables.
- Sprinkle flour on top and cook for 1 minute.
- Add seafood stock and wine. Stir in with bay leaf and thyme.
- Reduce heat and let mixture simmer until liquid is reduced and flavors combine.
- Stir occasionally and let simmer for 30 minutes.
- Remove bay leaf and thyme then puree in a blender until smooth, in batches as needed.
- Bring heat back to medium-low. Add the lobster tails. Cook for 3 to 5 minutes or until cooked through.
- Garnish with chives and serve immediately.
