Lobster Chowder

Creamy, indulgent Lobster Chowder takes only 40 minutes to make and is incredibly flavorful! Tender potatoes, crisp bacon, and luscious lobster are enveloped in a creamy, velvety broth.

Ingredients

  • 1 pound Bacon chopped
  • ½ cup yellow onion diced
  • 2 cloves garlic minced
  • ¼ cup all-purpose flour
  • ½ teaspoon paprika
  • ½ teaspoon thyme dried
  • 6 cups chicken broth
  • 3 cups potato Yukon gold, unpeeled and diced
  • 1 ½ cups heavy cream
  • 1 pound lobster chopped, cooked
  • ½ teaspoon salt
  • black pepper to taste, cracked
  • dill optional for garnish, chopped
  • parsley optional for garnish, chopped

Instructions

  1. Add 1 pound chopped bacon to a large pot over medium-high heat and cook until crispy. Remove it using a slotted spoon and set aside.
  2. Add ½ cup diced yellow onion and cook until tender. Stir in 2 cloves minced garlic and cook for 30 seconds.
  3. Sprinkle in the ¼ cup all-purpose flour, ½ teaspoon paprika, and ½ teaspoon dried thyme then stir to make a paste.
  4. Pour in 6 cups chicken broth and 3 cups Yukon gold potatoes, unpeeled and diced. Bring the liquid to a boil and reduce to a simmer for 10-15 minutes or until the potatoes are tender.
  5. Stir in 1 ½ cups heavy cream, 1 pound cooked lobster,, and the cooked crumbled bacon. Season to taste with ½ teaspoon salt and cracked black pepper,
  6. Garnish with chopped dill and parsley, if desired. Enjoy with crusty bread or crostini.
