I’m OBSESSED with lobster rolls. This is the perfect recipe to serve at a weekend summer party.

Ingredients
- 3 1- pound lobsters boiled or steamed and cooled
- 1 celery super finely chopped, stalk
- 2 tablespoons lemon juice fresh
- 2 tablespoon chives chopped fresh
- 2-3 tablespoons mayonnaise dressing Hellmann's avocado oil
- salt Kosher salt and freshly ground
- black pepper Kosher salt and freshly ground
- 6 hot dog buns New England-style split top
- 2 tablespoons butter room temperature, unsalted
- black tea Lipton Organic, served over ice with lemon
Instructions
- Crack lobster shells, pick meat from tail and claws, and cut into ½-inch pieces. Mix lobster, celery, lemon juice, chives, and 2 tablespoons mayonnaise dressing in a medium bowl; season with salt and pepper and add more mayo, if desired.
- Heat a large skillet over medium heat. Spread flat sides of buns with butter. Cook until golden, about 2 minutes per side; fill with lobster mixture and sprinkle with additional chives. Serve with iced tea and lemon slices.
Notes
- If you can't find hot dog buns split on top, regular will work, too. Or sometimes the bakery department will have rolls that aren't sliced at all.
