Description

The Lobster Salad combines prepared lobster meat with diced cucumber, tomato, yellow bell pepper, and optional minced habanero for a touch of heat. Red onion is softened by marinating in lime juice and salt before mixing. Fresh herbs such as parsley, basil, or mint, and extra virgin olive oil bring herbal freshness and a fruity richness. Black pepper finishes with subtle warmth.

This dish serves well as a chilled appetizer or light entrée, making the most of summer vegetables and the sweet, tender lobster. The lime juice and herb dressing adds brightness without overpowering the seafood’s natural taste.

Since the lobster must be cooked beforehand, steaming whole lobsters for about 20 minutes or butter poaching lobster tails are recommended methods. The salad can be served immediately or after resting for flavors to meld.

Ingredients

  • 1/4 cup lime juice or vinegar
  • 1 onion minced, small; red variety
  • salt
  • 1 to 2 pounds lobster meat see above for alternatives
  • 1 cucumber diced
  • 1/2 pound tomato diced
  • 1 bell pepper seeded and diced, yellow
  • 1 habanero pepper optional, minced
  • 1/2 cup herbs parsley, basil, mint, etc, chopped
  • 1/3 cup extra virgin olive oil
  • black pepper

Instructions

  1. Mix the minced onion with the lime juice and a little salt. Set this aside while you chop everything else. This process takes the sting out of raw onions.
  2. Cut the lobster into chunks you'd like to eat. then toss in a bowl with all the remaining ingredients. You can eat this straight away, or let it sit for an hour for the flavors to meld; I prefer the latter.

Notes

  • This recipe assumes cooked lobster; steam whole lobsters about 20 minutes or butter poach tails as an alternative.
  • Marinate minced red onion in lime juice and salt to soften its bite before mixing into the salad.
