Long Beans Recipe

Long beans are quickly blanched and then stir-fried with a mixture of garlic, ginger, anchovy paste, and sauces including sriracha and soy sauce. This preparation yields tender-crisp beans coated in a savory, mildly spicy, umami-rich sauce that complements Asian-style meals or serves as a flavorful side dish.

Description

This recipe begins by trimming long beans and cutting them into manageable lengths. They are briefly boiled in salted water just until tender-crisp, then quickly drained. The key flavors come from a pan stir-fry of toasted sesame oil and cooking oil heated with garlic and ginger, which provide aromatic notes.

The beans are then tossed with anchovy paste, sriracha, and soy sauce and cooked briefly to coat the beans well while retaining their crunch. The result is a dish featuring bright green beans with a satisfying snap, balanced by a savory, slightly spicy, and salty sauce that highlights the anchovy and chili elements.

Served right away, these long beans offer complexity while keeping a fresh vegetable texture that works well as a side for many cuisines.
