Description

Lots of Fresh Basil Tomato Sauce combines whole peeled canned tomatoes with olive oil, garlic, oregano, and fresh basil to create a vibrant, herb-forward sauce. Added hot pepper flakes provide a warming undertone without overpowering the other flavors. Water is used to adjust consistency during cooking until the sauce thickens.

The sauce is simmered on medium heat to reduce excess liquid, concentrating the tomato and herb flavors. Fresh basil contributes a bright and aromatic note that distinguishes this sauce from tomato-only versions.

The drained, al dente cooked short pasta is tossed in the sauce along with some reserved pasta water to bind the sauce and noodles together.   • 1 cup basil 21 grams, fresh; chopped
  • 1 can Pelati tomatoes 400 grams, peeled, chop if whole, no additions, 14.1 oz; do not discard liquid
  • 2 tablespoons olive oil
  • 1 -2 garlic cloves, chopped
  • 3/4 teaspoon oregano
  • 1/4 - 1/2 teaspoon salt
  • hot pepper flakes to taste
  • 1/4 cup water (60 grams)
  • 3 cups pasta 750 grams, cooked, short (eg rigatoni, penne

About 1 1/2 - 2 cups (168 - 224 grams) dry pasta.

Instructions

  1. In a large pot boil water, add salt and cook pasta al dente.
  2. While water is boiling, in a large pan add olive oil, garlic, can of tomatoes, oregano, salt, hot pepper flakes, fresh chopped basil and water, cook on medium heat until thickened.
  3. Add the drained cooked pasta and half a ladle of pasta water, raise the heat and while gently stirring constantly, cook for approximately 1-2 minutes or until thickened.  Serve immediately with chopped fresh basil and grated Parmesan Cheese.  Enjoy!
