Lotus Root Soup
Description
This Lotus Root Soup begins by cutting lean pork ribs into manageable pieces and slicing peeled lotus root to expose its crunchy texture. Dried honey and red dates are soaked briefly to soften before being added with the ribs and root to boiling water. The soup simmers gently for about an hour, allowing the pork to become tender while the lotus root stays pleasantly crisp, and the dates release their natural sweetness into the broth.
Flavor-wise, the soup offers a gentle sweetness from the dates balanced by the savory and fresh notes of pork and lotus root. The slow simmering melds these flavors into a clear, light broth that is both soothing and refreshing.
It is commonly served as a warming starter or alongside rice in a traditional meal. Salt is added at the end to taste, preserving the delicate balance of the broth. This soup can be enjoyed any time as a simple yet thoughtful dish showcasing humble ingredients.
