Low-Carb Chocolate Chip Bars

Tired of dessert deprivation on a low-carb diet? These low-carb chocolate chip bars may just be the answer.  Just in time for cookout season!

Ingredients

  • 4 ounces cream cheese room temperature
  • 1/4 cup butter room temperature, unsalted
  • 1 cup Swerve sweetener or other sweetener
  • 3 egg
  • 1 tsp vanilla extract
  • ½ cup almond flour
  • 3 Tablespoons coconut flour
  • Pinch salt
  • 3/4 teaspoon baking powder
  • ¼ teaspoon xanthan gum
  • ½ cup chocolate chips sugar free if you have them

Instructions

  1. Preheat oven to 350 degrees. Line a 9 x 9-inch cookie pan with parchment paper.  
  2. With an electric mixer cream butter, cream cheese, vanilla extract and sugar substitute. 
  3. Add the eggs one at a time, mix well making between adds
  4. Fold in the almond flour, coconut flour, baking powder, salt, and xanthan gum.
  5. Stir in the chocolate chips.
  6. Pour into 9 x 9 pan and level as well as you can. Bake for 30-45 minutes or until golden on top
  7. Cool completely.  Use ends of parchment to pull cookies out, then cut on a flat surface.

Notes

  • You can also add 1/2 cup of walnuts if you'd like
