Ingredients
- 1/4 c unsalted butter softened
- 1/4 c Sucralose granulated sweetener
- 1 tsp vanilla extract
- 1 egg large
- 1 1/2 c Bob’s Red Mill Fine Almond Flour
- 2 tbsps cocoa powder unsweetened
- 1/4 tsp baking soda
- 1/4 tsp salt
- 10 Sugar-free Peanut Butter Cups
Instructions
- In a small bowl combine the almond flour, cocoa powder, baking soda, and salt. Set aside.
- In a mixer cream together butter and sweetener until fluffy, about 2 minutes.
- Add egg and vanilla to butter and continue to mix.
- Slowly add the dry ingredients to the bowl continuing to mix until all of the ingredients are fully incorporated.
- Preheat an oven to 350°F.
- Scoop 2 tablespoons of dough from bowl and form it around a sugar free peanut butter cup. Repeat this process until all of the dough has been used.
- Place cookies on a lined baking sheet and bake for 10-12 minutes.
- Let cookies cool for 5 minutes on the baking sheet then move them to a cooling rack to cool completely.
