Ingredients
- 3.5 pounds corned beef
- 15 savoy cabbage large leaves
- 1 onion medium
- 1 lemon large
- ¼ cup coffee
- ¼ cup white wine
- 1 tablespoon bacon fat rendered
- 1 tablespoon brown mustard
- 1 tablespoon erythritol brand NOW
- 2 teaspoons kosher salt
- 2 teaspoons Worcestershire sauce
- 1 teaspoon black peppercorns whole
- 1 teaspoon mustard seeds
- ½ teaspoon red pepper flakes
- ¼ teaspoon cloves
- ¼ teaspoon allspice
- 1 bay leaf large

Instructions
- Add your corned beef, liquids, and spices to the slow cooker.
- Let this cook for 6 hours on low.
- When it's ready to be taken out, bring a pot of water to a boil.
- Add all 15 cabbage leaves plus 1 Sliced Onion to the boiling water for 2-3 minutes.
- Remove the cabbage from the water and blanch them in ice water for 3-4 minutes. Continue boiling the onion in the water.
- Dry cabbage leaves off, slice meat, add onions, and roll the fillings into the cabbage leaves.
- Optional: Serve with squeeze of fresh lemon!
