Low Carb Enchiladas

Zucchini slices replace tortillas in this easy recipe for Low Carb Enchiladas, filled with taco seasoned ground beef & smothered in a delicious red sauce!

Ingredients

Servings
  • 1 tbsp olive oil
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 2 cups Red Enchilada Sauce divided
  • 2 zucchini large
  • 2 cups pepper jack cheese shredded

Optional Toppings

  • sour cream
  • hot sauce
  • avocado sliced
  • cilantro chopped
  • jalapeños sliced

Instructions

  1. Preheat the oven to 350°F.
  2. Add the olive oil to a large skillet over medium high heat.
  3. Add the onion and bell pepper, saute for 4-5 minutes.
  4. Add the ground beef and cook through.
  5. Drain any grease, then add the taco seasoning and ½ cup red enchilada sauce.
  6. Reduce the heat to medium-low and simmer for 5 minutes.
  7. Remove from the heat and set aside.
  8. Slice the zucchinis lengthwise into thin slices.
  9. Place half of the zucchini slices in a layer on the bottom of a 9” x 13” baking dish.
  10. Top with the ground beef mixture.
  11. Place the remaining zucchini slices on top of the beef.
  12. Top with the remaining 1 ½ cups sauce and 2 cups shredded pepper jack cheese.
  13. Place in the oven and bake for 25 minutes.
  14. Remove from the oven and top with the optional toppings of your choice.

Notes

  • Want to spice up these enchiladas? Sauté diced jalapeños or serrano peppers with the onions and bell peppers. Or add 2 tablespoons sriracha or hot sauce to the enchilada sauce.
