Description
The soup begins by browning sliced Italian turkey sausage using the sauté function of the Instant Pot, developing rich savory notes. Onions, diced tomatoes, and chicken broth are added before the mixture is pressure cooked for 15 minutes, intensifying flavors. Ingredients
- 1 pound Italian turkey sausage , sliced
- 1/2 cup onion , diced
- 15 ounce diced tomatoes
- 32 ounce chicken broth
- 8 ounce kale stem removed, and chopped
Instructions
- Set Instant Pot to saute normal or low and brown the sausage.
- Turn Instant Pot off and add onions, diced tomatoes, and chicken broth to the pot.
- Fasten the lid on your Instant Pot or pressure cooker and close the steam valve. Set to manual, pressure, high for 15 minutes.
- While the soup cooks place the chopped kale in a microwave safe dish with about 1/2 a cup of water and then cover and cook in the microwave for 3-4 minutes or until the kale is tender but still bright green. Remove, drain water, and set aside.
- After the time is up let the pressure cooker sit for about 10 minutes and then release the rest of the steam by opening the valve carefully.
- Open the lid to your pressure cooker and add kale before serving.
Notes
- Kale can be steamed separately for better color or cooked with the other ingredients for convenience.
