Low Carb Taco Casserole
Description
The Low Carb Taco Casserole blends ground beef cooked with jalapeno, onion, and taco seasoning to infuse classic southwestern flavors. Incorporating cream cheese and salsa adds creaminess and tang, enriching the meat mixture. This blend is placed in a baking dish and topped with a custard-like mixture of eggs, hot sauce, and heavy cream, which sets into a rich layer during baking.
Grated cheddar and pepper jack cheeses provide a melted, gooey topping that complements the spicy, savory base. Baking at 350 degrees allows the eggs to firm up gently while the cheese melts and browns slightly, resulting in a casserole with a balance of firm yet creamy textures and a flavorful, mildly spicy profile.
This dish works well as a low carb main course, ideal for dinners where grain-based dishes are limited but flavor and satisfaction are desired. It pairs nicely with fresh vegetables or a side salad and suits those managing carbohydrate intake without sacrificing classic taco flavors.
