  • 1 pound ground beef
  • 1/4 cup onion chopped
  • 1 jalapeno pepper minced
  • 1 taco seasoning or homemade, packet
  • 1/4 cup water
  • 2 ounces cream cheese
  • 1/4 cup salsa
  • 4 egg
  • 1 tablespoon hot sauce
  • 1/4 cup heavy whipping cream
  • 1/2 cup cheddar cheese grated
  • 1/2 cup pepper jack cheese grated

Instructions

  1. Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray.
  2. Brown the ground beef in a large skillet over medium heat.
  3. Add the onion and jalapeno to the beef and cook until onion is translucent. Drain any grease.
  4. Stir in the taco seasoning and water and cook for 5 minutes.
  5. Add the cream cheese and salsa and stir to combine.
  6. Crack the eggs in a medium mixing bowl and whisk together with the hot sauce and heavy cream.
  7. Pour the meat mixture into the prepared baking dish and top with the egg mixture.
