Ingredients

The Nuggets

  • 24 oz chicken thighs cut
  • 1 egg large
  • 1.5 oz pork rinds
  • ¼ cup almond meal
  • ¼ cup flax meal
  • lime zest from 1 lime
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. chili powder
  • ¼ tsp. paprika
  • tsp. onion powder
  • tsp. garlic powder
  • tsp. cayenne pepper

The Sauce

  • ½ cup mayonnaise
  • ½ avocado Hass, medium
  • ½ tsp. red chili flakes
  • 1 tbsp. lime juice
  • ¼ tsp. garlic powder
  • tsp. cumin

Instructions

  1. Dry and slice the chicken into bite-size pieces.
  2. In a food processor, pulse all of the ingredients for the crust.
  3. Put the crumbs in 1 bowl and a whisked egg in another. Dip the chicken in the egg, then the crust, and lay on a greased baking sheet.
  4. Bake at 400F for 15-18 minutes or until chicken is cooked through, then make sauce by mixing together all ingredients.
