Low Fat Turkey Chili Bean Sandwich
Description
Ground turkey is cooked with minced garlic and diced onion until browned, then combined with tomato paste, seasonings including cumin, salt, sugar, and chili powder, alongside beans, green chiles, and diced tomatoes. This creates a mildly spiced chili mixture with a thick, saucy texture.
The bread rolls have their soft centers scooped out to create a cavity for the chili, which is spooned in while hot. The sandwiches are finished with reduced-fat shredded cheddar cheese and a sprinkle of fresh parsley. The rolls used are French rolls or bolillos, which provide a sturdy yet soft base.
This sandwich is suitable as a filling lunch or casual dinner, practical where a less greasy, protein-rich option is desired. The recipe notes that bolillos or French rolls are commonly found in many supermarkets or Latin markets but may be substituted with other large rolls as needed.
Ingredients
- 1 tablespoons olive oil
- ¼ white onion small diced, medium
- 1 garlic minced, clove
- ½ pound ground turkey thawed
- ½ teaspoons tomato paste
- ½ teaspoon salt
- ¼ teaspoon cumin ground
- ¼ teaspoon sugar
- ¼ - ½ teaspoon chili powder
- 2 tablespoons water
- ½ can chili beans 8 oz, in mild sauce
- 3 tablespoons green chiles canned diced
- 3 tablespoons diced tomatoes canned
- cheddar cheese reduced fat or fat free, shredded
- parsley chopped
- 6 French rolls or bolillos
Instructions
- In a medium non-stick skillet, heat oil over medium heat and sweat onion for about 3-4 minutes, stirring occasionally. Add the garlic and cook for 1 minute. Do not let brown! Increase heat to medium-high and add the ground turkey. Cook, stirring occasionally, for about 5 minutes or until browned. Stir in the tomato paste, salt, cumin, sugar, chili powder, water, beans, green chiles, and diced tomatoes. Reduce heat to medium and let cook for about 5-6 minutes, stirring occasionally. Taste and adjust the seasonings if necessary.
- Cut off the two ends of the rolls and scoop out most of the soft bread center. Spoon the turkey chili into the hollowed out roll while still hot, and top each with a bit of shredded cheddar and chopped parsley. Serve Turkey Chili Bean Sandwich(es) immediately!
Notes
- Bolillos or French rolls, typically available at Walmart, local supermarkets, and Latin markets, offer the ideal texture and structure for this sandwich.
- Other large rolls can be used if bolillos or French rolls are unavailable, depending on personal preference.
